Quinoa Pasta

Quinoa Pasta! Healthier and Gluten-Free



I promise you, you will fall in love !!!
The quinoa noodles are to die for.. and are so strange
in a good way :)

The noodles are thicker but when you swallow them they don't make you feel bloated and gross but light like you could run a marathon!!!!

How to make the noodles:
*Bring 4 quartz of water to a boil*
*Add 2 Tbsp of Olive Oil*
*Bring to a boil*
*Let your noodles cook for 6-9 minutes*
The water will be yellow but that is normal it's releasing all of the starch.
Cold Pasta:
Drain and splash cold water on the noodles

Warm Pasta:
Drain and serve with your favorite sauce 
(Walden Farm's Marinara is good and has no calories, no fat, no sugar and no fat *does have salt*)
OR 
Earth Balance Butter and GoVeggie Lactose free "Parmesan cheese"



YOU HAVE NO IDEA HOW DELISH THIS PASTA IS!!!!!
I am craving it right now...
OH MY GOSH!!!

BanaCayman Ice Cream

BanaCayman Ice Cream


I LOVE Ice Cream and since I choose not to have dairy I decided to make my own ;)
Not just any kind though, BANANA !!!


The banana's I found at Foster's, a supermarket in the Cayman Islands, were perfect and super ripe!
What better way to make use of a perfect banana than with ice cream!?

What you will need:
*Vitamix Blender*
*3 Ripe Bananas*
*A little bit of water*



How to prepare:
Cut up the 3 bananas and put them in a bowl and place them in the freezer overnight.
In the morning take them out of the freezer and let them thaw out for 10-15 minutes.
Then put the bananas in the blender. The banana's will be harder to blend since they are frozen and by adding a little bit of water the blades with spin easier and 
the ice cream will get done faster.






Once your banana's are at an ice cream consistency,
spoon the deliciousness into a bowl!

To add texture to your ice cream,
add banana slices or any other kind of fruit/topping you like!


EVEN MY GIRLS LOVED THE ICE CREAM...
if they liked it I KNOW you will :)

W.O.C. Salad "Cayman Salad"

W.O.C. West of Cayman Salad
(this is what I ordered almost everyday while on vacation :]! )


This was the first salad I ordered when we arrived last Saturday!
Lets just say I am SO GLAD I did !!!

With the beans, corn, tomatoes, and avocado it tasted just like a taco salad, MY FAV !

What was in the salad:
*Mixed Greens (or whatever kind you like)*
*Black Beans*
*Corn*
PICO DE GALLO
*Tomato*
*Onion*
*Avocado (for dressing)*

SOOOOOO YUMMMY !! I ordered it almost everyday!!!

The next day I decided to add some Jalapeños and Banana Peppers on the side!


The pepper juice was perfect for extra flavor, as well as a nice kick!

TRY IT OUT!!!!!
Add more veggies too and make it even tastier !

My "Cayman" Strawberry & Banana Smoothie is so refreshing and light to get you ready for the day!!
I also like to add an orange on the side because, lets face it,
oranges are DELISH :)



What you will need:
*Vitamix Blender*
*2 Bananas*
*Handful of strawberries*
Thats it :)

Plus the Orange on the side !



100% Guilt Free
Enjoy it :P

CAYMAN ISLANDS :)

FUN IN THE SUN <3
Cayman Islands !!



Don't let "vacation" give you an excuse to eat unhealthy!

We went to the Grand Cayman's local supermarket, Foster's !!

I bought:
*Bananas*
*Mango*
*Watermelon*
*Green and Gala Apples*
*Strawberries*
*Oranges*
*Papaya*
*TONS OF WATER*

What about if I go out to dinner?!
What can I eat...?

THAT'S EASY!!!
Order a salad, with tons of veggies!
If the salad doesn't come with a lot of veggies ask them what all they do have and add them on...
Most of the time they won't make you pay extra!!

If they have Avocado use that as your dressing.. mash it in your bowl and mix it up.
*Pepperonchini and other peppers are really good for dressings too*!

FRUIT BOWL!!!

*Half of a watermelon*
*A spoon*
*A hungry belly*

Burrrrrrrrrito ;)

Kristina's Fully Raw Burrito & Awesome Sauce ;)


Feelin' Festive!?!?
WELL IF YOU ARE
.......
Here is the recipe to a HUGE delicious chard burrito 
<3

This recipe was created by the one and only
 FullyRawKristin (she is my inspiration)
and this burrito is SO tasty 
I had to share it with you !!
What you will need:

*Large Chard Leaves*
 (Kristina uses Collards)


*Green, Red, Orange, and Yellow Bell Peppers
*Zucchini*
 *Cucumber*
*Shredded Carrots*
*Some Lemon Juice*
*Tomatoes*
*Small Bunch of Cilantro*
*Green Onions*
*Alfalfa Sprouts*
*A few Sesame Seeds*
*Quarter of an Avocado*
(Thats about all you need to keep this low-fat)
*I used Quinoa for protein*

Cut all the ingredients as small as possible!!
Then mix them together!!!




Now for Kristina's Awesome Sauce:



*Half of a Zuccini*
 (more if desired)
*Less than the quarter cup of Sesame Seeds*
*Juice of 1/2 Lemon*
*Few Sprigs of Green Onion*
*1 Bell Pepper*
(preferably red)
*Use a Vitamix to Blend*

The mix of your "RAINBOW" veggies and the Awesome sauce 
is a perfect combination!!!

As long as you keep your avocado to a minimum this burrito has little to no fat in it!!

Pasta pasta pasta, a new way!

Zucchini Pasta w/ Raw Marinara

"Who woulda thunk ;)"

YES, you read the description right, ZUCCHINI PASTA!
It is soooo yum! 
At first I was a little thrown off... but when I got home last night and noticed this on the counter...........



 I ran right to the refrigerator and grabbed my zucchini!!!!

 

LOOK HOW FLIPPIN' COOL THIS IS!!!
It is also, hands down, the easiest little thing to use !!




What you will need:
For the "pasta"
*A Spirilizer*
(or cut the zucchini into thin strips.. I did that before I got my spirilizer)
*2 little zucchini's*



For the Marinara:
*Vitamix*
*2 tomatoes*
(REMOVE THE SEEDS).. my marinara was watery 
*1 Celery Stalk*
*Lemon Juice (to taste, not to much)*
*handful of cilantro*
*handful of basil*
*half of a red bell pepper*
(I think adding some green onion would be yummy, I am going to try that next time)




Then pour your Marinara on top of your zuchinni pasta 
AND SCARFFF!

*Remember* 
This is made with 100% veggies, eat as much as you want to!!!!

Salad Time !


Welcome, My Favorite Salad!




Have you ever heard of "Eating the Rainbow" ?! 
Well that's what you should do, at least
once a day!!!

Throw as many veggies into a bowl, even veggies you don't like!
There are so many veggies you won't even 
notice they are there !!

What I put in my HUGE salads:

*VEGGIES*

Spinach
Collard Greens
Kale
Cilantro
Basil
Green Onion
Zucchini
Tomatoes
Carrots
Celery

*PROTEIN/NUTS/SEEDS*

Quinoa
Raw; almonds, pumpkin seeds, sunflower seeds, and pistachios
Raw Goji Berries
and 
Organic Raisins

*DRESSING*

Guacamole
(made with only tomato and lemon juice)



FIRST:








*Wash your GREENS!*
They may be Organic, but you should always
wash your veggies!!








Toss them up!
Mix them up!
Shake, Shake, Shake 





Dry off your GREENS and put  them in a big ol' bowl!!!!!!!





Getting my protein in, QUINOA
all day, every day!
yum yum yum :)











Add in your "RAINBOW" of veggies!!
Don't be afraid to load up!









Now for the Nuts, Goji Berries and Raisins !







Finally add your Guacamole
(this guac includes ONLY tomatoes and lemon juice)








Look at that GREEN GUACAMOLE!!!!!!!
It's pure deliciousness

What I hope you take away from this post:

*Eat the rainbow :)
*Load up on veggies, do not worry about the "calories"
 if you aren't using fatty calorie filled dressings,
eat to your hearts content!
*Make sure to get protein in your salad like quinoa, beans, or anything you like
*Eat an array of nuts and seeds, be careful not to eat to much (like they say, to much of a good thing [healthy fat] can be a bad thing)
*Make your dressings, HEALTHY!
Throw the fatty calorie filled yucky dressings away!

BE HEALTHY, STAY FIT, WORK HARD!

You rock!
