Pancake day!

Pancakes are my favorite !!!! 
Today I created Coconut flour, Chia seed, banana pancakes ! 


Ingredients include: 

3 bananas
1/2 cup of coconut flour
2 chia eggs (2 tablespoons of chia seed and 6 tablespoons of water)
1 1/2 cups of almond milk (you may need a little more)
1 teaspoon of baking powder
1 teaspoon of cinnamon


First blend the bananas and chia eggs together (when making the chia eggs let the water and seeds sit for 15 min. The seeds will become gel-like! Like an egg)


Once you blend the "eggs" and bananas add in the almond milk! 


Then, in a large mixing bowl, mix the coconut flour, baking powder and cinnamon! 


Once the wet and dry ingredients are mixed together put the banana mix into the mixing bowl with the flour! 


Once you mix them together and ensure there are no clumps in the batter you can start making your pancakes !! 


Use coconut oil on the skillet and pour in a tablespoon of batter per pancake! 


This recipe will make a ton of pancakes especially if you are just using a tablespoon per pancake!! Quantity may vary!

I always see people stacking pancakes and I have always wanted to try it! Here is my attempt! 

Of course Tullie Jo is in the picture too! :)

After I took this picture I thought a little bit  and realized I needed syrup! So I went to the kitchen and made strawberry and banana sauce! 


Ingredients:
1 frozen banana and a handful of strawberries! 

These pancakes are soo yummy! 


Word of advice: use only a LITTLE bit of coconut oil on the skillet if you use to much the pancakes will break apart!

W.O.C. Salad "Cayman Salad"

W.O.C. West of Cayman Salad
(this is what I ordered almost everyday while on vacation :]! )


This was the first salad I ordered when we arrived last Saturday!
Lets just say I am SO GLAD I did !!!

With the beans, corn, tomatoes, and avocado it tasted just like a taco salad, MY FAV !

What was in the salad:
*Mixed Greens (or whatever kind you like)*
*Black Beans*
*Corn*
PICO DE GALLO
*Tomato*
*Onion*
*Avocado (for dressing)*

SOOOOOO YUMMMY !! I ordered it almost everyday!!!

The next day I decided to add some Jalapeños and Banana Peppers on the side!


The pepper juice was perfect for extra flavor, as well as a nice kick!

TRY IT OUT!!!!!
Add more veggies too and make it even tastier !

I also like to add an orange on the side because, lets face it,
oranges are DELISH :)



What you will need:
*Vitamix Blender*
*2 Bananas*
*Handful of strawberries*
Thats it :)

Plus the Orange on the side !

CAYMAN ISLANDS :)

FUN IN THE SUN <3
Cayman Islands !!



Don't let "vacation" give you an excuse to eat unhealthy!

We went to the Grand Cayman's local supermarket, Foster's !!

I bought:
*Bananas*
*Mango*
*Watermelon*
*Green and Gala Apples*
*Strawberries*
*Oranges*
*Papaya*
*TONS OF WATER*

What about if I go out to dinner?!
What can I eat...?

THAT'S EASY!!!
Order a salad, with tons of veggies!
If the salad doesn't come with a lot of veggies ask them what all they do have and add them on...
Most of the time they won't make you pay extra!!

If they have Avocado use that as your dressing.. mash it in your bowl and mix it up.
*Pepperonchini and other peppers are really good for dressings too*!



YOU CAN ALSO HAVE A 
SUPER HUGE
FRUIT BOWL!!!

Orange Cacao Dream Pudding

Orange Cacao Dream Pudding


It is FINALLY nice out !!!! Yahoo :)
I was surfing the "inter-web" and found this strange yet intriguing recipe!!!!

I was planning on working out before going to work but I HAD to make this ...
SO looks like I will be working out later tonight instead :)

I will tell you....
The ingredients in this pudding are a bit strange, 
but the taste will blow you away!!!!

What you will need:
*Vitamix Blender*
*1 Medium Avocado*
*1/2 of an Orange and the other half for the decoration*
*Some orange zest (the peel)*
*2 Tbsp of Cacao Power*
*2 Tbsp of Maple Syrup*
*2 Medjool (pitted) dates*





Throw all of the ingredients together into the blender
 and mix it all up!!

*Optional* 
Once I was done mixing the pudding I put it into a plastic bag cut the tip and squeezed it into my fancy dancy cup!!
(It ended up getting on the sides of the cup anyway so I wouldn't waste your time ahaha) :(



I put an orange slice at the bottom so when the pudding 
sits in the fridge it can keep soaking up the delicious orange juices!!!!


Once you get all the yummy pudding into the cup, use a spoon to spread it out !!

 I was rummaging through my moms drawers in the kitchen and came across these brilliant glasses!
(They are for her alcohol ahaha but they work for pudding too!)


For the Toppings:
*Slivered Almonds*
*Orange Zest (is the peel)*
*Anything else you think would taste good*


WALAAAAAA!!!!! My DELISH pudding!!

The best way to eat this pudding is COLD!! It gives the ingredients time to sit and soak in all the flavor !!!! 
*Leave it in the refrigerator for at least an hour*
Mine is waiting for me after work :)


 NOT only do I think this pudding rocks but so do my pups ahah

My favorite gazpacho

Gazpacho (chilled soup)
YUM



I came up with this gazpacho using my brain power and creativity....
Nahhhhh, I just threw random stuff in the blender!
hahah

I was expecting something blah, 
but it was SO GOOD!

What you will need:
*Vitamix Blender*
*2 large tomatoes*
*1/2 of a cucumber*
*handful of basil (more if you like the taste)*
*pinch of salt*
*juice of a lime, not to much*
*1/8 of an avocado*
*some water*
If you want, I noticed most gazpachos call for some olive oil...
if you choose to use it, use about 1-2 Tbsp!


Mix all the ingredients in your Vitamix blender!
It shouldn't take long for the gazpacho to be ready to slurrrrp.
;)


Top with your extra avocado, cucumber, tomato, and basil :)
I would recommend putting toppings on it and using a bit in every bite!
